Our 2026 Wild Mixed Venison Grind is made using a mix of various species of wild invasive animals from South Texas for bnls meat (trimmings with connective tissue/silverskin intact), bones, and organs (heart, liver & kidney).
WILD, FIELD HARVESTED - MIXED VENISON
For our Grind's muscle meat, organs and bones, we use a blend of various Cervidae species and antelope. Learn about each of the different field-harvested venison/deer and elk below. They provide us with a blend when the differences are indeed minimal, practical and the highest quality can be maintained. Elk is infrequently included, while the muscle meat is usually an antelope mix. PLEASE NOTE: Nothing is certain when field-harvesting wild animals. Weather and animal movement often impact the success of harvests. The available supply of specific species, cuts and sizes will vary.
WILD, FIELD HARVESTED VENISON
Fully inspected, truly free-range wild game meat from Texas. Our field harvesting technique is to quietly search the ranch for deer ready for harvesting and felling the deer by a long-range, single shot to the head using a sound suppressed rifle. The purpose of this unique technique is to ensure the animals are never under any stress, resulting in the highest meat quality possible. After harvest our venison undergoes a 21-28 day double aging process before cutting by our skilled butchers. The end result is the finest venison available.
WILD, FIELD HARVESTED - SOUTH TEXAS ANTELOPE (NILGAI)
Native to the foothills of the Himalayan mountains, where it is known as Nilgai Antelope, these animals were introduced to Texas by the King Ranch in the 1930’s. They have thrived on the South Texas plains and now range over millions of acres. The meat has an extremely low fat content with a very clean taste and veal-like texture.
WILD, FIELD HARVESTED - AXIS VENISON
Among the most magnificent of all deer and sought after for trophy hunting. This native of India and Nepal provides some of the highest quality, best tasting venison in the world. It's the same species as our original Maui Nui venison - with a fine grain and delicate flavor.
WILD, FIELD HARVESTED - SIKA VENISON
Availability Dependent on Harvests. Once thought to possess magical powers, Sika deer are native to Manchuria, Japan and Taiwan. Ranchers interested in propagation of the species imported some animals to the Texas Hill Country. The free-ranging herds have thrived, allowing for limited harvesting to control populations. Sika deer are the small member of the elk family so their meat is dark in color with a rich, beefy flavor.
WILD, FIELD HARVESTED - FALLOW VENISON
Availability Dependent on Harvests. The Fallow deer is native Europe and the ancient empire of Persia. Fallow deer have adorned the private game parks of European kings for centuries. Their venison is tender with a nice level of gaminess throughout the flavor profile.
WILD, FIELD HARVESTED - RED DEER
Availability Dependent on Harvests. Red Deer have established populations throughout the world and are a common source of venison for many. Often red deer are farmed but the ones we harvest are wild and free-ranging on large Texas ranches. Red deer are closely related to elk so meat's profile is similar - dark in color with a rich, beefy flavor.
WILD, FIELD HARVESTED - NORTH AMERICAN ELK
Availability Dependent on Harvests. Once native throughout the western US, North American Elk is now considered an exotic species in Texas. This means we can harvest wild elk year-round without limited seasons. Elk venison has a full, beefy flavor profile.
