When sourced from pasture-raised/wild hogs, it is the second highest food source of Vit D, after cod liver oil. Depending on their diet just before slaughter, the nutrients found in pork fat will vary dramatically. With a wild foraging hog, the fat can be high in omega-3s (est. of 420 mg of omega3 per serving). Our producer is currently working with fatty acid researchers at UCD to learn more about the unique fatty acid profile of their Iberico pigs that wild forage over acres of open California pastures, eating acrons and anything else they desire.
