These animals forage on native grasses, seeds, and fruit, giving the meat a mild venison-like flavor. Nilgai Antelope is naturally up to 97% lean, and low in cholesterol and calories, making it packed with healthy nutrition. The product is harvested in the field and processed into primal cuts on-site, in mobile USDA facilities. It is then dry aged on the bone for 12-18 days, adding incredible tender, concentrated flavor and consistency.
