I would rate the skinless chicken necks that used to be available with five stars as they were lean, easy to grind (for my old, dentally-challenged miniature poodle and mini bull terrier who will choke trying to eat big chunks), and inexpensive. The skin-on necks are considerably less satisfactory as I need to peel most of the skin off (20% waste) and the occasional heads spook me every time.
